Dessert is a great alternative to heavy cakes. Sometimes you want something very light and tender, but at the same time, sweet and tasty. Therefore, the Italian dessert panna cotta is the best way out of the situation. It resembles pudding, but has a much denser texture and richer flavor. Classic panna cotta is made only from cream, sugar and vanilla. But if you wish, you can always experiment by adding cocoa, berries, and even coffee or liqueurs to the recipe.

Ingredients for panna cotta with strawberries.

For strawberry jelly:

Water – 250 ml
Sugar – 50 g
Strawberries – 300 g
Lemon zest – 1 tbsp.
Gelatin – 4 g

For the soufflé:

Cream – 400 ml
Milk – 200 ml
White sugar – 50 g
Brown sugar – 75 g
Gelatin – 9 g
Vanilla extract – 2 tsp.

How to cook panna cotta with strawberries.

1. To prepare this dessert you need to start with strawberry jelly. Wash the strawberries and remove the stems. Leave a few berries whole, and mash the rest into a puree using a masher.
2. Combine water and sugar in a small saucepan. Cook until the sugar dissolves. Leave aside to cool. Add strawberry puree to the cooled syrup, stir and leave aside for 30 minutes.
3. Soak the gelatin in cold water for five minutes until it swells greatly. Add lemon zest and strawberry puree. Mix everything very well so that there are no lumps left. If necessary, beat the mixture with a blender.
4. Take silicone molds or portion cups for dessert. Place strawberries on the bottom, after cutting them into several parts. Then pour the strawberry mixture so that each portion contains an equal amount. Let it harden in the refrigerator for an hour.
5. About 40 minutes after you have left the strawberry jelly to set, you can start preparing the panna cotta.
6. Combine milk, cream, sugar and vanilla extract in a saucepan. Place on the fire and bring to a boil, cook over low heat, stirring constantly until the sugar dissolves.
7. Soak the gelatin in cold water for a few minutes until it swells greatly. Add gelatin to warm milk mixture. Mix thoroughly, making sure that there are no lumps left.
8. Remove the cups or molds of strawberry jelly from the refrigerator. Now very carefully pour the cooled milk mixture on top. It is very important that the milk is not hot because it can ruin the delicate texture of the jelly.
9. Place in the refrigerator to set for at least 4 hours, preferably overnight.

If you cooked immediately in portioned cups, then serve the dessert on the table in them. And if in silicone molds, then you need to carefully remove the panna cotta and place it on a plate. Serve garnished with fresh berries and a sprig of mint.

This Italian dessert has driven me crazy since the first time I tried it, which was a couple of years ago. I cook it very often, with or without reason. Previously, I often prepared the classic version from 30-35% heavy cream... tasty, but very high in calories. The first tests of the experiment were diluted cream with milk, I also prepared it with the addition of yogurt, it was also tasty, even just from milk... it wasn’t bad either. Having tried different options, I liked the option made from cream with 10-11% fat content, which tastes great and is acceptable in terms of calories. Any berries, fruits, jelly, caramel, chocolate sauces, etc. can be used as an addition. Today I have strawberries, just like in the summer. Tasty, fresh and very tender!

To prepare, we will need a very small set of products: 11% cream, sugar, instant gelatin, powdered sugar, strawberries and a vanillin pod (of course, you can replace it with vanilla sugar).

Dissolve gelatin in 3 tablespoons of cold water for 5 minutes.

Remove the seeds from the vanillin pod and use the pod itself.

Pour cream into a saucepan, add sugar, seeds and the vanilla pod itself, put on fire and heat until hot, about 50-60 degrees.

Then immediately strain the hot cream.

Add dissolved gelatin and mix well.

Pour into bowls and refrigerate for 1-2 hours.

Meanwhile, cut the strawberries into pieces.

Mix strawberries with powdered sugar and leave until they release their juice and the powder dissolves.

Place strawberries into the frozen panna cotta and pour over the resulting juice.

In fact, these are two completely different desserts, both in terms of preparation technology and taste. Making strawberry panna cotta begins with preparing the gelatin. Pour gelatin with warm water according to the instructions. Leave it to swell.

Pour the cream into the pan.

Add sugar. The amount of sugar listed in the ingredients list can be adjusted to taste.

To achieve a subtle vanilla flavor of the dessert, add a packet of vanillin. A vanilla pod is also good for these purposes, but it should be removed from the cream immediately after boiling. Mix the cream with a spatula.

Place the pan on the stove. Let the cream boil and immediately remove the pan from the heat. Wash the strawberries. Tear off the stems.

Place in a blender bowl and blend until pureed.

Fold strawberry puree into the cream. To obtain a more uniform panna cotta structure, the strawberries can be rubbed through a sieve before adding to the cream.

Stir the cream and strawberry mixture.

Pour in the swollen gelatin.

Mix the mixture thoroughly so that the gelatin is evenly distributed in it.

Ingredients:

  • gelatin granules - 2 tbsp. l.
  • sour cream 18% fat – 400 ml
  • cocoa powder – 1 tbsp. l.
  • strawberries – 400 g
  • granulated sugar - 3 tbsp. l.

  1. Choose a small container that can be heated. Pour gelatin into it, dilute it in cold boiled water and leave to swell for 45 minutes.
  2. It should completely absorb moisture. If you take instant gelatin, you can fill it with water and use it immediately.

  3. Stirring constantly, heat the thickened mixture over very low heat. It should turn into a clear yellowish liquid. In no case should you bring it to a boil, since gelatin loses its properties when heated. Allow the liquid to cool at room temperature. See more about dissolving gelatin.

  4. Mix sour cream with half the sugar or powdered sugar.

  5. Brew cocoa powder in a small amount of boiling water. This will make it easier to achieve homogeneity of the mass and prevent the formation of lumps.

  6. Pour 2/3 of the cooled gelatin into the sweet sour cream. To stir thoroughly.

  7. Divide the resulting mixture into two equal parts.

  8. Pour cooled cocoa into one of them.

  9. Mix the chocolate mixture thoroughly.

  10. Wash the strawberries and set aside two large, beautiful berries to decorate the panna cotta. Separate the rest from the stalks and cover with the remaining granulated sugar.

  11. Using an immersion blender, puree the strawberries. Pour the remaining gelatin into it and mix thoroughly.

  12. Prepare two transparent bowls. Fill each one 1/3 with sour cream jelly. Place in the refrigerator for 30 minutes. Then fill another 1/3 of the bowl with chocolate jelly. Place the containers back into the refrigerator for 30 minutes. If desired, the layers in the bowls can be poured in the reverse order: first chocolate, then sour cream.

  13. Lastly, add the strawberry jelly, filling the remaining space in the containers.

  14. Before freezing panna cotta, you need to put one strawberry in each bowl.

Preparation

1. Dissolve gelatin in 50 ml of boiling water. Stir it with a fork and leave for 5 minutes to swell.

2. Pour granulated sugar and vanilla sugar into a container with a non-stick bottom. If you have vanilla pods available, peel the core of one and add the pulp to the container.

3. Pour in the cream and milk. Do not use homemade cream, as it turns into fat when heated, but you can buy milk of any fat content. Heat the mixture on the stove, stirring it, to 80-90C. Make sure that it does not start to boil - this is a very important moment in preparing dessert! Then remove the container from the stove and pour the dissolved gelatin into it. Stir again and cool slightly.

4. Peel the strawberries from the tails, rinse and puree with a blender. Pour strawberry puree into prepared glasses or bowls. Immediately pour the creamy mixture onto it and carefully mix with wooden sticks or a fork, forming beautiful patterns. Place the glasses in the refrigerator for about 2-3 hours to set.
