Usually in the summer we make a lot of different jams. And in winter I use it to prepare a variety of baked goods, from ordinary pancakes to delicious pies. My family likes pies most of all, in which the filling is visible.

In open jam pies, the liquid evaporates slightly and it turns into jelly confiture. This is delicious! Such pies can be made from different doughs - yeast and yeast-free. I will tell you about this in my recipes. You can quickly make a rich homemade pie with jam, for example, apple or raspberry, for tea, and this will be very useful when you suddenly want something sweet on a winter evening.

Sequencing:

  1. Melt the margarine. (You don’t need to heat it too much. When more than half has melted, remove it from the stove. Stirring until completely liquid. Or you can put it in the microwave for a short time. For convenience, I recommend cutting it into pieces.)

  2. Dissolve sugar in margarine, stirring with a whisk.

  3. Add eggs and vanilla. Beat a little. You just need to shake it well, without achieving foam, just enough so that the grains of sugar just disperse.

  4. Add soda dissolved in vinegar or lemon to this mixture. If you have neither one nor the other, you can extinguish the soda in 30-40 ml of boiling water.
  5. Sift the flour. Pour a third into the container with the egg mixture. Stir with a whisk, breaking up any lumps.

  6. Add the rest of the flour. Knead into an obedient, soft dough. All this can be done in a food processor or with a mixer if you have special attachments for kneading dough.
  7. We roll the dough for an open pie with jam into a “bun”. Wrap it in cling film and put it in the refrigerator for half an hour.

  8. During this time, preheat the oven to 190°, grease the mold with any butter or margarine.
  9. Separate 1/4 from the cooled dough. Roll out the rest into a layer slightly larger than the bottom of the mold. After twisting it onto a rolling pin, transfer the layer. We cover the bottom, prick it with a fork in several places, and slightly raise the sides.

  10. Mix jam with starch. This way it will not flow out when heated, but will turn into a jelly-jelly mass. When using jam or marmalade, this is not necessary.

  11. Spread the jam, spreading it evenly over the dough.

  12. Roll out the remaining quarter of the dough and cut into strips. We place them in a net on the pie.

  13. Place the pan with the pie on a baking sheet or wire rack. Bake on the middle tier of the oven for 35 minutes.

Sprinkle the finished cake with powdered sugar if desired.
I advise you to prepare it for a family tea party or. Based on this recipe, you can bake a closed pie, only you need to make a lot of punctures in the top crust with a match or a toothpick so that the pie does not turn out too wet and is baked inside.

First, let's solve the jam issue. If you have thick jam or jam, then in this case you do not need starch. But liquid jam will immediately flow out of the puffs. Therefore, heat it, add starch there and stir well, there should be no lumps. It should now cool completely. When baking puff pastry products, when heated, the jam and starch will turn into a very thick mass, which will remain inside the puff pastry.

Thaw the package of puff pastry and roll it out into a large layer up to 2-3 mm thick.

Cut the layer into 6 even pieces. We, in turn, cut each part in half and make small oblique cuts on one of the halves.

Carefully spread the jam onto part of the puff pastry without making any cuts.

What you will need:

  • puff pastry yeast - half a pack.
  • sugar - glass.

What to do:

  1. Roll out the dough.
  2. Ideal if you roll it out into a circle.
  3. Cut the dough into small triangles.
  4. On the wide side, closer to the middle, place a teaspoon of jam and roll from the wide edge to the narrow one in the form of a croissant.
  5. Beat a large egg with a mixer, brush the resulting croissants, sprinkle granulated sugar on top.
  6. Line a baking pan with parchment and place the prepared croissants into it.
  7. Preparation: in an oven heated to 180°C for fifteen minutes.

What you will need:

  • margarine – 300 g;
  • non-carbonated mineral water – 170 ml;
  • granulated sugar - tsp;
  • salt - just a little;
  • premium wheat flour – 4 tbsp;

  • apple – large – 5 pcs.;

  • potato or corn starch - tsp;
  • yolk of a large egg - pcs.;
  • refined oil – 2 tbsp. l.

What to do:

  1. If the dough is frozen, defrost it naturally.
  2. After the dough has thawed, separate 20% of it and put it aside.
  3. Roll out the rest to a thickness of 1 cm, the approximate size of your baking container.
  4. Place the dough into the container immediately.
  5. Mix jam with starch.

  12. From the dough that we set aside at the very beginning of the process, we make round strips and from them we construct a grid, which we place on top of the pie.
  13. Mix the yolk of a large egg with melted butter and coat the top.
  14. Preparation: oven at 180°C for 30 minutes.

Recipe for puff pastry buns with jam

Pies are pies, but sometimes you just want buns with jam. Without any frills - buns on the table, and that's it! And here is the recipe, please.

What you will need:

  • puff pastry yeast - kilogram
  • apple jam – glass
  • raisins - glass
  • granulated sugar - 2 tbsp. l.
  • refined oil – 3 tbsp. l.
  • powdered sugar for sprinkling.

What to do:

  1. Dough: frozen - defrost naturally, roll out into a large layer with a rolling pin.
  2. Coat the surface with refined oil and sprinkle with granulated sugar.
  3. Next, distribute the filling evenly over the dough.

Baking from puff pastry will always please you. You can use it to bake rolls, pies, bagels, bagels, buns, as well as non-sweet baked goods. The most important thing is that the dough does not let you down when baking.

To do this, when purchasing in a store, always pay attention to:
-Composition from which the dough is prepared. It is very important that the highest grade of flour is specified. If the flour has low gluten content, the dough will tear. The same goes for margarine. It should be of the best quality, elastic.
-Best before date. If you suspect that the dough has been defrosted, do not purchase it. It will no longer rise and failure in the kitchen is guaranteed. Always feel the package, if there are any bulges in the package or the dough is not firm, the dough has been defrosted. It is advisable to use fresh (by expiration date) frozen dough.
-To obtain fluffy and airy baked goods, defrost the dough for at least 2 hours (directly in the package so that it does not dry out). It is even better to defrost the dough in the refrigerator, and then transfer it to the table and continue to defrost at room temperature. By defrosting the dough in the microwave, you risk ruining the baked goods; they simply won’t rise. If your dough is rolled, increase the defrosting time.

What is the difference between puff yeast dough and non-yeast dough?
Yeast dough makes excellent buns, buns or croissants... It is prepared on the basis of yeast. Under no circumstances should such dough be frozen a second time, as this will kill the yeast. The baked goods will turn out flat. Yeast-free dough is ideal for baking cakes. The margarine in the puff pastry heats up and “expands”, making the dough fluffy and flaky.

Everything is just outrageous. Defrost the yeast dough. Usually there are 2 layers in a package. Therefore, we roll out one layer for now. Place it on a baking sheet lined with parchment paper.

Cover it all with jam. I had frozen blackcurrant puree without sugar (left over from the NZ stock, I made it for my child to add to porridge). That’s why I also sprinkle sugar on top.

Roll out the second layer. Cut it into strips. And place it on the pie diagonally.

If there are any pieces of dough left, cut out any shapes, in my case flowers.

Bake in a preheated oven at 180 C for 10-15 minutes. As soon as the currant pie has browned, take it out!
